I dunno. I liked the Disney touch to the games, myself. Sure, it made them more kid-like, in some areas, but sometimes, people just want to be a kid again, so it's a nice touch, because it allows you to do so while still playing with a somewhat mature story line.
As for Final Fantasy being the heart and soul of Square Enix, you have to understand that it's because of the game series that they're even still around today. If not for the release of Final Fantasy 1 when it came out, they probably would have went under and we'd be shit out of luck on a lot of other damned good games. The Final Fantasy series saved their asses. Well, Square's anyway. Enix wasn't a part of that at the time, obviously.
The mixture of the two aspects, disney and final fantasy is what makes those games, and I think if you took either one of those aspects out, it would lack considerably. You could try to fill the void with something else, but it wouldn't feel right.
Of course, that's not to say that these games are for everyone. Tastes differ. I personally enjoyed all the KH games thoroughly and anxiously await one on the ps3
