Spekkio and his forms ARE in the Bestiary.

If you are already passed a level of Spekkio due to being of a higher level, that version of Spekkio automatically appears in the Bestiary section, so no worries - croaker Spekkio is in there, despite you having never encountered him.

That's good news! I guess I have to fight Spekkio first, before I get Croaker in the bestiary?

I wonder if all forms of Spekkio are listed in the Bestiary? And do I have to fight each form to get the entry? I think I'll miss the Croaker because I'm already at level 10...

The english script is the same, as expected. Also, on my rom was no option whatsoever at all to change to another language. English only.

That's right.

Is seems that there are some differences between CTDS JP and US.
In the US version you don't have the option to change the language in the settings menue.

Haven't got mine yet.
Is the US version's translation/script exactly the same as the Japanese version?
Starting to wonder if I should just import the original...

As far as I know, the English text is exactly the same in both versions! Therefore I imported the Japanese version.
