I wonder if all forms of Spekkio are listed in the Bestiary? And do I have to fight each form to get the entry? I think I'll miss the Croaker because I'm already at level 10...  :(

Spekkio and his forms ARE in the Bestiary.

If you are already passed a level of Spekkio due to being of a higher level, that version of Spekkio automatically appears in the Bestiary section, so no worries - croaker Spekkio is in there, despite you having never encountered him.

But the stronger ones don't appear until you fight that form or w/e is stronger? Like, would Masamune-Spekkio appear when you fight Kilwala-Spekkio?

That's good news! I guess I have to fight Spekkio first, before I get Croaker in the bestiary?

No.  Only the current form of Spekkio and those lower appear - even if you never saw or fought them.
